WINEMAKING  Hand-harvested. Double sorting, total destemming, berry crushing, long maceration, regular cap manual punching for optimal phenolic extraction.

FOOD PAIRING  Red meats like lamb, duck with olives, and game, Provençal stew, and truffle dishes.
