A rosé with Provençal color and Mediterranean freshness.  WINEMAKER Basile Ricome APPELLATION  AOP Costières de Nîmes GRAPE VARIETIES  96% Syrah – 4% Viognier TERROIR  8 to 13-year-old vines with Southern exposure and made of Rhône pebbles and a thin layer of limestone. Certified Organic CULTURE & VINIFICATION  After picking, bunches are pressed for drainage only. No press juice in the blend. Drainage juice gets isolated for 24 hours at 53°F before racking; thin lies are kept in with the juice when the fermentation process starts. Juice gets fermented at 55-59°F for 14-18 days.
